Meet the Neighbors with Elaine Lin
Welcome to Meet the Neighbors! 🙂  Each week we meet a different talented food blogger, and we get to “ooohh” and “ahhhh” over all the beautiful food that these people create.  I just love it!  Today we are meeting the lovely Elaine Lin, who blogs over at Food Parsed.  Her specialty is taking complicated, intimidating recipes and streamlining them so that anyone (even a beginner!) can cook.  Wait until you see her featured recipe– with only 2 ingredients!  I think that’s just awesome.  Quick and easy are A+ for me!  Elaine is also a BRAIN– she currently attends MIT!  Wow.

What is your name, and where are you located? (Hint: if you live in Hawaii, I am packing my bags as we speak 😉
Elaine Lin. I go to MIT in Cambridge, MA.
Tell us a little bit about yourself– what is the name of your blog, and how did you get started?
I blog at FoodParsed. My very first post was a guide to groceries around MIT. I started blogging so I could teach beginners, especially college students, how to cook and feed themselves.
What is your favorite food? And what is your least favorite food?
I adore ice cream! I never buy it because it would disappear from the house in a day (regardless of how big the container was…). I’m not a big fan of powdery packaged chips, such as Doritos. I find that salty, fried snacks are tasty for about 10 seconds before becoming dull and greasy.
What advice would you give someone who is just starting to cook?
Start with eggs! Googling “easy recipes” doesn’t give you very useful results. Stick to recipes with very few ingredients, apply heat, and season to taste.
What keeps you going, every day? Who are your greatest cheerleaders/supporters?
The people around me make my life brighter every day. I love logging into my social media accounts and reading positive, cheerful, loving posts from my blogging friends. My friends at MIT have been wonderfully patient in listening to me gripe about food photography problems, such as blue lighting and lopsided garnishes.
Elaine was kind enough to share with us her recipe for these 2-ingredient banana pancakes. Â That’s right. Â TWO INGREDIENTS. Â Wow! Â Elaine says:
“I made 7 batches of 2 ingredient banana-egg pancakes. The cooking process took 4 whole hours!”
